Paella – the jewel of Valencian cuisine
All emblematic Spanish dishes have a regional provenance. In Valencia, it’s paella.
The reason is historical. When the Moors settled in the region of Valencia, they introduced rice to the Albufera region of Valencia, where delta-like conditions were optimal for cultivating the grain.
Paella was invented to feed agricultural workers, by adding to the rice local herbs and whatever else was available – be it vegetables, pork, chicken or even snails. This is why paella purists insist that the best paella is cooked in the open air – in a thin paella pan over an open fire.
Today, paella, and particularly seafood paella, is traditionally eaten for Sunday lunch. On Thursdays, it also forms part of the ubiquitous menu del día.
Why Thursdays? Because historically, that was the maid’s day off – so she could leave everything prepared for the paella the night before. All the lady of the house had to do was add stock and stir.
